Luckily, this recipe makes 4 servings… so if your Valentine’s Day date heats up or fizzles out, you always have more in the fridge waiting for you.  

In order to love, we must break down barriers and be open-minded — not put up walls and live in fear. Therefore, this chocolate mousse was inspired by the flavors and ingredients of Mexico. In fact, one of the first known links between chocolate and romance was during the Mayan era. The Mayans used to create a holy beverage made from ground cocoa beans, cayenne pepper, and water for religious and marriage ceremonies.

Chocolatey, sweet, zesty, and spicy, it’ll be hard to not fall in love with this dessert! Although decadent, the ingredients in this chocolate mousse are also good for you! Cacao contains twice as many polyphenols (powerful antioxidants) as a glass red wine (bonus points if you indulge in both this Valentine’s Day). In Mayan, chia means, “strength.” Full of fiber and rich in nutrients, this tiny seed will help curb your appetite so you don’t eat all four servings in one sitting… and give you an energy boost for lovemaking 😉  Best of all, the flavorful spices and orange peel in this dessert will add a powerful dose of cancer and disease fighting phytonutrients.

Ingredients

  • 1 can full cream coconut milk
  • 4 Tbs. chia seeds
  • 1/2 cup cacao powder (you can always sub with cocoa powder to save money and buy more roses)
  • 1 orange, fresh squeezed juice
  • 2 Tbs. Grade A maple syrup
  • 1/2 Tsp. cinnamon
  • 1/4 Tsp. cayenne pepper
  • 1/2 inch slice of fresh ginger
  • Pinch of salt

Directions

  1. Place all ingredients in a blender and blend until smooth.
  2. Pour mixture in an airtight container and let it chill overnight (or 4-6 hours)
  3. Optional: garnish with fresh orange zest, coconut flakes, and a pinch of cinnamon

Notes

For a lower fat version, use coconut milk instead of coconut cream. It will have a more pudding like consistency, but be just as tasty!
