Matcha Ginger Ice Cream

Ingredients

  • 1 cup coconut cream
  • 1 cup coconut milk
  • 1 inch slice of fresh ginger
  • 1 1/2 Tbs. matcha green tea
  • 1 Tbs. maple syrup
  • Toasted black sesame seeds (optional topping)

Directions

  1. Put all ingredients – except for the sesame seeds – in a blender or food processor and blend until everything is combined.
  2. Pour liquid mixture into two ice trays. Place in freezer for several hours until the mixture is completely frozen.
  3. Pop out the ice cubes -- by pushing a knife down on one side of each section – and add them to your blender.
  4. Blend, using a tamper, until the mixture is creamy and smooth. If the mixture becomes too icy in consistency or is challenging to blend, add in a little bit of coconut milk until you get the texture that you want.
  5. Serve immediately and enjoy! Tip: if you don’t eat all of the ice cream in one sitting, freeze the leftover portions in popsicle molds!
